  • 1 tablespoon dried thyme

  • 1–2 tablespoons fresh ginger, finely sliced or grated

  • 1 tablespoon dried lemon peel

Instructions

  1. Prepare the Herbs

Place the dried mullein leaf, dried thyme, fresh ginger, and dried lemon peel into a clean, dry glass jar. Gently mix to combine.

2. Add the Honey

Slowly pour raw honey over the herbs, making sure everything is fully submerged by about ½ inch. Use a clean spoon or chopstick to release any trapped air bubbles.

3. Seal and Infuse

Seal the jar tightly and place it in a warm, dark spot. Let the mixture infuse for 2–4 weeks, gently turning or stirring the jar every few days to keep the herbs evenly coated.

4. Strain the Syrup

Once infused, strain the honey through a fine-mesh strainer or cheesecloth into a clean bowl or jar. Press gently to extract all the infused honey, then discard the herbs.

5. Store

Transfer the finished syrup to a clean glass mason jar and store in the refrigerator or a cool pantry. It will keep for several months thanks to honey’s natural preservative properties.

How to Use
